Scott Pickett to Open New Deli and Rotisserie

Scott Pickett, the chef and restaurateur behind ESP and Estelle Bistro, is due to open a delicatessen and rotisserie at Queen Victoria Market. Pickett’s Deli and Rotisserie will take on the market deli concepts that Queen Victoria Market’s long-time tenants have perfected for decades and add on an all-day eatery and a bar. Visitors will be able to saddle up for an early morning breakfast before a walk through the market and eat in or grab a takeaway lunch during the day. By night, the Hirsch Bedner Associates-designed venue will transform into a city restaurant and bar where city dwellers can order a post-work cocktail or glass of wine to go with bar snacks, or stay awhile for dinner.

The move reflects fellow chef Paul Wilson’s planned move to open Wilson and Merchant, a flagship restaurant and rotisserie slated for an August or September opening at Prahran Market. “My very first memory of Melbourne is visiting the Vic Market and tucking into a grilled bratwurst before the footy,” Pickett said in a statement. “I’ve always been enchanted by the market’s bounties and have many friends and suppliers here. It’s a special moment for me to be able to now work alongside them with my own offering at this unique Melbourne destination.”
